Iced Oatmeal cookies were an absolute staple in my childhood and I am here to maybe help bring you a piece of yours as well. Either way, these cookies are an absolute joy and everyone seems to love them. Did I mention they were super simple and easy to make?

Oven temp 350 degrees Fahrenheit. Bake time. 10-12 minutes per batch. Yields 2 dozen.
- Ingredients:
- 1 cup softened butter
- 1 cup light brown sugar
- 1/2 cup white sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2 cups All Purpose Flour
- 2 1/4 Cup Old Fashioned Rolled Oats
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon of salt
- 2 teaspoons cinnamon (make it a little heaping if you’re like me)
- 1/2 teaspoon of pumpkin pie spice for a little extra love (optional)
Icing Ingredients:

- 1 1/4 cup confections sugar
- 2-3 tablespoons of milk
- 1 teaspoon of vanilla extract (optional)
Recipe Instructions:
Preheat your oven to 350 degrees Fahrenheit or 177 degrees Celsius
In a large bowl or stand mixer, cream together butter and sugar until light and fluffy. Approximately 2-3 minutes. Once light and fluffy add in the eggs one at a time, mixing in between each egg. Add in the vanilla extract just to combine. In a separate bowl combine your flour, baking powder, baking soda, cinnamon, pie spice, and salt. Add your dry ingredients into your wet ingredients in 3 batches, mixing to combine in between. Once just barely combined, add in your rolled oats and mix just to combine. Once your oven has preheated, roll cookie dough in about a 1 – 1 1/2 in ball and place on a cookie sheet about 2 inches apart. Place in your preheated oven until just browned on the edges. About 10-12 minutes. (I like to check at the 10 min mark). Once baked, place your cookies on a cooling rack to cool down.
Make your icing!
In a small bowl, combine your powdered sugar, vanilla, and milk (1 tablespoon at a time) until combined. You want it to be thick but still a little loose to properly coat the tops of the cookies.
Once your cookies have cooled, dip the top of each cookie in the icing and set for a few minutes until icing has set and enjoy!!!!
Recipe Notes:
If you don’t like as much spice to your cookies, you can omit the pumpkin pie spice and just add the 2 tsp. of cinnamon.
The vanilla in the icing gives the icing a little extra love and flavor to it but the vanilla can cause your icing to not be stark white, that’s okay.
